Veggies Made Great Spinach and Egg Frittatas

I was looking for a gluten-free breakfast food and found a box of Spinach and Egg White Frittatas by Veggies Made Great in Costco. The box contains 20 frozen frittatas, individually wrapped in plastic. I gave it a try and I give them a rating of 4/5.

To prepare, the instructions say to microwave the frittata in the plastic for 45 seconds. In my microwave, that’s not nearly enough, and the frittatas were still frozen in the middle. I ended up following the instructions first, then carefully opening the plastic (to avoid being burned by any steam), putting the frittata “puck” on a plate, cutting it into quarters with a sharp knife, then microwaving it for at least another 30 seconds. If that’s still not enough, mash them up and microwave for a little longer.

They taste OK. They are fairly bland so you may want to add salt or salsa to enhance the flavour. The consistency is a little mushy but it’s not bad. I found that two frittatas was enough for breakfast and three were OK for lunch.

To me they are a convenient and relatively healthy gluten-free meal, but I’d prefer something with more taste.
